  • Step 1

    Preheat the oven to 390 degrees Fahrenheit and set aside and oven proof dish.
  • Step 2

    Heat the olive oil in a large frying pan over a medium/high heat.
  • Step 3

    Dice the chicken and add to the frying pan until cooked through. Once cooked, arrange the chicken in the oven proof dish.

    Melt the butter in a large saucepan over a medium heat. Slice the mushrooms and leeks and mince the garlic. Add them to the pan with the butter and fry gently until tender – about 4 minutes.

    Add the cream cheese to the pan and stir until melted.

    Pour the cream into the pan and add the herbs, salt and pepper, stirring to combine. Bring to a simmer and cook gently for 5-6 minutes until the sauce starts to thicken and reduce.

    Pour the sauce over the chicken pieces and scatter the parmesan over the top.

    Place in the oven to bake for 18-20 minutes until hot through, bubbling and golden on top.

    Scatter with fresh parsley to serve.

          Don't expect very large portions, which shouldn't be a surprise given the richness of the dish, but this is legitimately delicious. The best recipe I've found on this app so far.

            DELICIOUS. This is one of my favourite 3 recipes from this app so far 👌 On one occasion I added a splash of white wine to the sauce, which totally transformed it, perfect for a special occasion.

                              Delicious recipe, I added steamed broccoli with the chicken to make it more of a complete meal. It's very rich so a little bit was very filling. I also found the chicken was a bit dry so I would maybe cook it a little less in the pan before transferring to the baking dish. I would try making this again with different spices. Overall it was good!

                                    Maybe try to add the mushrooms to one side of the dish so you can enjoy the mushrooms and the person who doesn't like them can take from the side of the dish that has none. 🤷

                                            If the chicken pieces are cooked in the pan, then the sauce is prepared… why bake it too? Doesn’t the chicken get over cooked?

                                            I made a four serving of this.......and the only thing I did different is I added one cup of riced cauliflower to the sauce in the pan. Very very yummy. I had two servings for dinner.....couldnt help myself, so gooood !!
