Make this easy Keto granola for a multitude of purposes: meal prep, snacking, or a Keto addition to main meals. It’s made with crunchy pecans and brazil nuts, which are both known for their healthy fats. This is why granola can be so good for you on the Keto diet. By adding coconut oil to the granola, you’re adding flavor and more healthy fat to the recipe. You can follow some of the guidelines below for serving suggestions or eat the granola as is by the handful. Keep cooled granola stored in either an airtight container or a sealed Ziploc bag at room temperature for up to one week.

Serving suggestions

Granola doesn’t have to be eaten plain! Enjoy this Keto granola in a bowl with ice-cold almond milk. You could also use coconut milk or oat milk. Granola can also be broken up over salads or added on top of main course dishes. Enjoy the granola as a breakfast or a snack!

Xylitol substitutions

Xylitol can be substituted with other Keto sweeteners. The most common would be liquid stevia drops, powdered erythritol, or a monk fruit and erythritol blend. Liquid stevia will add zero carbs to your granola.

Other flavors to add

Only a little cinnamon and some vanilla flavor the original recipe here. Other easy flavoring options you might choose are some simple baking spices like pumpkin pie spice, nutmeg, or a pinch of ginger. Instead of vanilla extract, try almond extract to enhance the nutty flavor of the granola.

  • Step 1

    Preheat an oven to 285 F (140 C) and line a shallow oven tray with baking paper. Roughly chop the brazil and pecan nuts into small chunks. The smaller the pieces, the better the recipe will be.

    Melt the coconut oil in a dish in your microwave. Add the chopped nuts to a mixing bowl along with the xylitol, cinnamon, melted coconut oil, and vanilla. Stir well to combine, covering the nuts in the oil, sweetener, vanilla and cinnamon.

    Arrange the nuts in an even layer across the lined baking tray and transfer to the oven to bake for 30-35 minutes until fragrant and golden brown. Allow to cool completely before serving. Use the granola as a cereal, or see serving suggestions made at the beginning of the recipe.

      Have not made yet but sounds good. This is what i do — i figure my own calories/carbs. When these recipes say one serving i think you have to look at the serving size. As in this recipe the serving size is 2.5 oz or x grams— i feel sure 2 ounces of nuts would way more — guessing here. Again i make my own serving size by separating into equal amounts. if you search on healthline.com Brazil nuts. They do indeed caution amounts to limit to due to high selenium amount. 🙏😎🖖

        This is good, but I might add some stevia on top too. I use 2.5 oz of granola with a 1/2 cup of vanilla unsweetened almond milk and it tastes great. Filling too. Definitely a quick breakfast to have on hand.

            70.9g a serving. You can see it in your serving option next to macro and calories count. Today i mixed cashews, Brazilian and walnuts instead.

            Waaaay to much Selenium (1100% Daily recommended). The safe upper limit for selenium is 400 micrograms a day in adults. Anything above that is considered an overdose. Sub out some of the brazil nuts with almonds or walnuts.

              I have a similar recipe (which can be made into crackers or "bread") which uses chia seed flour (ground seeds in a coffee grinder) and hot water to make its ingredients stick together. For anyone avoiding eggs, I imagine that would work here too. Also some melted SF chocolate dipped on the bottom of each bar would make a nice granola bar binder too.

              Sounds good and may be able to make bars. Then make it 8 bars for less carbs and calories

            I barely taste a thing because I’m dealing with COVID right now. But I think this tastes good and it’s easy to make. I love to eat something that doesn’t have cheese or eggs.
